 Ingredients for Meatloaf with Cheese and Green Quinoa:

 1 cup quinoa

 3 cups baby spinach

 1 cup fresh coriander leaves

 1 large garlic clove

 12 ounces ground beef

 8 ounces ground turkey, 99% fat-free

 ¼ cup milk (2% fat)

 3 tablespoons of whole wheat breadcrumbs

 4 teaspoons Worcestershire sauce

 1 teaspoon chili powder

 1 large egg

 Kosher salt and freshly ground black pepper

 4 teaspoons red vinegar

 2 small plum tomatoes, cut into 12 slices

 5 tablespoons grated cheddar cheese

 12 small (8 ounces) watermelon slices, to serve


 How to make meatloaf with cheese and green quinoa:


 1. Preheat the oven to 400 degrees Fahrenheit, then line an oven tray with parchment paper.

 2. Wash the quinoa several times in a fine mesh strainer and then drain. Heat a medium pot of water on the stove to boil.

 3. Add the quinoa and boil until soft, 10 - 15 minutes. Dry the quinoa and then rinse it under cold water, then set it aside to drain well and dry.

 4.Meanwhile, blend the spinach, cilantro and garlic in a food processor and blend until the vegetables are sliced.

 5. Transfer 1/3 of the mixture to a medium bowl with the ground beef, turkey, milk, breadcrumbs, 2 teaspoons Worcestershire sauce, chili powder, egg, 1/2 teaspoon salt and some black pepper.

 6. Mix the mixture well with your hands.

 7. Whisk the remaining two tablespoons of Worcestershire sauce with two teaspoons of vinegar. Divide the meat mixture into four 1-inch-thick soccer balls. Arrange the balls on the prepared baking tray.

 8. Spread 3 slices of tomato on each ball, then sprinkle with a little Worcestershire sauce with vinegar.

 9. Bake until the internal meat temperature reaches 165 degrees Fahrenheit, 18-20 minutes.

 10. Drizzle the beef loaves with more of the Worcestershire vinaigrette, spread the cheese over them and bake until the cheese melts, 2 minutes more.

 11. Lay the bottom of each meatloaf on top of a paper towel to remove excess moisture.

 12. Meanwhile, combine quinoa, remaining spinach mixture, remaining vinegar and ½ teaspoon salt in a medium bowl, stirring, over medium-low heat, until mixture is heated through, 3 minutes.

 13. Distribute the steak, quinoa and watermelon evenly on four plates.
