Ingredients for Spicy Peanut Buttered Cabbage Strips

- 500g green cabbage (shredded or diced)

- 1 medium onion (finely chopped)

- 2 garlic cloves (minced)

- 1 tbsp olive oil

- 1 tbsp unsalted butter

- 2 tbsp peanut butter

- 1/3 cup warm water

- 1 tsp red chili flakes

- Salt to taste

- Black pepper to taste

- Roasted and chopped peanuts (for garnish)

- Fresh chopped parsley (for garnish)

Instructions for Spicy Peanut Buttered Cabbage Strips

Slice the cabbage into thin strips or dice, then finely chop the onion and mince the garlic.

Heat the olive oil and butter in a large skillet over medium-high heat.

Add the onion and sauté for 3 minutes until softened, then add the garlic and cook for 1 minute. Add the cabbage and sauté for 15–20 minutes, or until tender and lightly golden, stirring occasionally. If it starts to stick, add a little water.

Season with salt, black pepper, and chili flakes, then reduce the heat to medium-low.

Stir in the peanut butter and stir until melted and well combined with the cabbage.

Pour in the warm water, cover the pan, and simmer for 10 minutes, or until the flavors have melded and the mixture has a creamy consistency.

Stir well, then transfer to a serving dish.

Garnish with roasted peanuts and chopped parsley, and serve hot with rice, bread, or grilled meats.
